Siuijeonseo is a cookbook from the late Joseon dynasty, about 200 years ago, recording the food and table settings of yangban (noble) households. It is also known as the book in which bibimbap was first recorded, under the name "bubimbap."
Not simply a place to eat, but a place to experience
Siuijeonseo is not a restaurant that simply sells a meal. We set a table where you can sit, for an evening, at a Joseon dining table of 200 years ago.
It begins with a cup of omija tea. Then the smoke of Mungchi-gui rising as the mother-of-pearl box opens, Baektang and Hongtang ladled fresh from the iron cauldron, and Eogyo-sundae made just as the old record describes.
Over four courses, you become a guest of Joseon.
The Stone Bridge — a few steps across 200 years
There is no need to take off your shoes. Only set your busy mind down for a moment as you cross.
The way up to the second floor crosses a stone bridge over the first-floor pond. As mist rises beneath your feet, 200 years pass in a few steps.
Over two centuries ago, Joseon envoys set sail from Busan, carrying friendship and the flavors of Korea across the sea to Japan.
Today, just beyond our garden wall, there is a Japanese school. No ships, no long voyage this time — only a single wall, across which the aroma of a Joseon table quietly drifts.
The Joseon Tongsinsa were Korean goodwill missions to Japan that departed from Busan; the last one sailed in 1811.
A sundae made from the swim bladder of wild brown croaker (minueo). One fish yields just four pieces, and wild brown croaker is hard to come by, so few places serve it. Limited quantities.
I've traveled to Korea several times for business and leisure, and I can honestly say this was one of the most memorable dining experiences I've had anywhere in the country.
At first, I thought I was simply booking a nice Korean restaurant in Busan. What I experienced was something much more meaningful.
The restaurant is inspired by a Korean cookbook written over 200 years ago, and every course tells part of that story. The staff don't just serve food—they explain the history and significance behind each dish in a way that feels welcoming and engaging.
The service was exceptional from start to finish. Every member of the staff seemed genuinely proud of what they were presenting, and their knowledge of the menu was impressive.
The highlight for me was the main course. Before opening a beautiful decorative box placed on the table, the staff explained the story behind the dish and encouraged us to enjoy the presentation first. It created a sense of anticipation that you rarely find in restaurants today.
The food itself was outstanding. Not because it was overly complicated, but because every dish felt thoughtful and purposeful. You could tell there was real respect for Korean culinary history while still making the flavors approachable for modern diners.
For foreign visitors: don't worry if you're unfamiliar with traditional Korean cuisine.
This is not the kind of restaurant where you'll feel lost or confused. The staff guide you through the experience, explain everything clearly, and make it easy to appreciate the food regardless of your background.
The atmosphere deserves special mention as well. Elegant, peaceful, and unlike anywhere else I visited in Busan. It feels both modern and deeply connected to Korean culture at the same time.
I've eaten at Michelin-starred restaurants in New York, Chicago, Tokyo, and Singapore, and while this is a completely different style of dining, it delivered something many fine dining restaurants fail to provide: a genuine sense of place and story.
If you're visiting Busan and want more than just another meal, make a reservation here.
There are many restaurants you forget a week later.
This is not one of them.
In fact, if I had skipped this place during my trip, I think I would have regretted it.
Highly recommended.

Took my wife to Siui Jeonseo for her birthday dinner during our trip to Busan, and it completely exceeded our expectations. The presentation and care behind each dish was incredible. The flavors were clean, balanced, and beautifully layered. You can tell the chef puts real thought and passion into every course. The atmosphere is calm and refined, perfect for a celebration. The staff made us feel so welcome and helped make her birthday feel extra special. Honestly surprised this place isn't Michelin-starred yet. If you're in Gwangalli and want a memorable meal, this is it. We'll definitely be back.

We stumbling around looking for a place to eat, and our noses guided us here. We didn’t know what to expect but whatever they would have been surely would have been topped. The food, atmosphere, presentation were that of a high-end culinary experience. I’m not sure how this place isn’t at least on the Michelin guide but it surely will be soon. Highly recommend and will be coming back next trip.

Siui Jeonseo may be the most unique dining experience in Korea. They describe the food as a modern interpretation of the aristocratic household of the Joseon era. It was delicious, expertly prepared and presented. The staff and chef were helpful, kind and professional. If you’re traveling to Busan, put Siui Jeonseo on your list of must-visit restaurants.

Man bekommt traditionelle koreanische Gerichte, etwas moderner interpretiert.
